French Toast with a Banana Smoothie
Ingredients125 grams strawberries 120 grams blueberries 1 T icing sugar 6 eggs 1 cup milk 2 T caster sugar 1t vanilla extract 8 x 2cm thick slices of bread 40 g butter |
Recipe1. Wash and de hull strawberries and cut into quarters, remembering to cut the tops off. 2. Cover them with icing sugar and juice. Set aside. 3. Crack eggs into bowl, then add milk, sugar and vanilla. 4. Using a fork, whisk together until combined. 5. Pour into shallow dish that is large enough to hold bread in a single layer. 6. Dip bread in the egg mixture and leave to soak, turning once, until the bread has absorbed the egg. 7. Melt half the butter in a large non-stick or electric frying pan over low- medium heat. 8. Cook bread, in 2 batches for 2 minutes each side or until golden and egg has set. 9. Divide toast among plates, and then serve with strawberries and blueberries. |
