Banana Bread
Ingredients300 gms wholemeal self raising flour
3/4 cup caster sugar 1 1/2 cups mashed very ripe banana 2 large eggs ( each at least 60 gms) 1/3 cup natural yoghurt 85 gms of melted butter at room temperature or vegetable oil 6 tablespoons 1 teaspoon vanilla extract |
Recipe1. Preheat usual oven to 180 degrees Celsius (160 degrees Celsius fan forced )
2. Grease loaf pan with oil and line with baking paper 3. Mix flour and sugar well 4. Whisk together mashed banana, eggs, yoghurt, vanilla extract and butter or oil 5. Gently mix banana mixture with flour mixture, folding in until just combined 6. Transfer into prepared pan 7. Bake in oven for 65 to 75 minutes until wooden skewer inserted in centre comes out dry 8. Allow to cool in pan for 10 minutes 9. Remove and cool on wire rack 10. Cut into individual slices and wrap 11. Store at room temperature for two days 12. Reheat in toaster or microwave with butter on top before serving |
