Classic French Omelette
Ingredients2 large eggs each ( at least 60 gms each)
Pinch of salt Pinch of pepper 1/2 teaspoon vegetable oil( canola and sunflower oil) Stuffing options: a tablespoon each of finely chopped mushrooms, finely chopped capsicum, finely chopped onions/ spring onions, finely chopped spinach leaves, finely grated cheese |
Recipe1. Break eggs in bowl. Whisk gently with salt and pepper( pinch of each or as per taste).
2. Heat 8 inch nonstick skillet over medium heat, add 1/2 teaspoon oil, swirl to coat. 3. Add egg mix to pan, cook for 1-2 minutes or until centre still looks wet, stirring constantly with rubber or silicone spatula. 4. Tilt pan while stirring to fill any holes with uncooked egg mix. 5. Spread 1 tablespoon of stuffing of choice( no stuffing, single or mix of stuffings) 6. Run spatula around edges and under omelette to loosen it from pan. Push one end of omelette onto front lip of pan. 7. Roll other end of omelette toward lip to close stuffing and omelette 8. Turn off flame and rest omelette roll in pan for 10-20 seconds. 9. Turn out onto plate, seam side down. 10. Can be served by itself or with toasted sour bread, grilled tomatoes, fried mushrooms or green salad to make a heavier meal. |
